This Rotisserie Chicken Fried Rice is great for a quick family meal. I can get this dinner on the table in about 15 minutes. Plus, it's filled with vegetables and the kids devour it.

How to debone a rotisserie chicken easily?
I find it easiest to debone a rotisserie chicken when it is still warm and just bought. As such, usually the first thing I do when I buy a rotisserie chicken is to debone it.
To do so, I wear food prep gloves, and simply tear the chicken off the bone. Once the meat is off the bones, I chop the chicken into pieces.
Rotisserie chicken pieces can be stored in an air tight container in the fridge, or frozen in the freezer. To freeze, I portion the chicken pieces into individual freezer bags. That way, I can defrost one bag at a time as needed.
Tip: Once you debone the chicken, simply simmer the bones in some water for about 30 minutes for a flavorful stock.
Is brown rice ok for fried rice?
Yes, you can make fried rice with brown rice. Typically, I like to use ½ white rice and ½ brown rice.
We most often use a mix of the two medium grain rice I linked above. They work perfectly for fried rice. The rice clumps just enough to make it easy to scoop and eat with a spoon. Moreover, the rice grains retain the ideal amount of chew.

I love the combination of carrots, red peppers and celery because they are tasty and colorful together. However, you can substitute the vegetables for other vegetables you might have in your fridge.
For example, other vegetables that would work well in this recipe:
- frozen corn
- sweet onions
- green beans
- green bell pepper
- brocolli
- chopped leafy greens such as spinach or bok choy

- Sauté the carrots. Next, add in the rest of the vegetables and sauté until slightly softened.
- Add in the rotisserie chicken and rice. Stir-fry until everything is heated and mixed.
- Lastly, add and mix in garlic salt and pepper, to taste.

In addition, to save time on the day of, freeze bags of chopped rotisserie chicken in advanced. Anytime we buy rotisserie chicken, I stash a bag or two of deboned chopped chicken in the freezer to use on a later date for a quick dinner.

Rotisserie Chicken Fried Rice
Equipment
- 1 10-inch chef's pan or wok
Ingredients
- 1 tablespoon cooking oil
- 2 medium carrots diced
- 4 stalks celery diced
- ½ medium red bell pepper diced
- 2 green onions trimmed and thinly sliced
- 2 cups chopped rotisserie chicken
- 3-4 cups cooked rice (I use a mix of brown and white)
- ⅛-1/4 teaspoon garlic salt (or to taste)
- ground white pepper to taste
Instructions
- Heat oil in the pan over medium heat. Add in the carrots. Sauté the carrots for about 3 minutes.
- Add in the remaining vegetables (celery, red bell pepper, green onions) and sauté for another 3 minutes or so, until the vegetables have slightly softened.
- Add in the rotisserie chicken and rice. Turn up the heat to medium-high. Stir-fry for about 5 minutes, until the rice and chicken are fully heated and everything is mixed. Add and mix in the garlic salt and white pepper, to taste. Serve and and enjoy.
